Chocolate Chip Banana Muffins

3 medium bananas1 T light butter2 T unsweetened applesauce(1 T Sun Crystals, sugar, or other sweetener is optional, but I don't find it necessary)2 T honey6 T liquid egg whites2 T skim milk1 T vanilla extract1 t baking powder1/2 t baking soda1/4 t salt (also optional)1 c whole wheat flour1 c oats (regular rolled oats are perfect)6 T chocolate chipsT = Tablespoont = teaspoonc = cup
Preheat oven to 350 degrees F.
Combine bananas, butter, applesauce, honey, sweetener if using, egg whites, milk, and vanilla until well mixed.
Add baking powder, baking soda, salt if using, and whole wheat flour and mix. Add oats and mix again. Finally, stir in the chocolate chips.
Spoon into sprayed muffin tins. Bake at 350F until toothpick inserted in center comes out clean (beware of melting chocolate covering the toothpick, though), generally between 15-20 minutes.
Allow to cool for easy removal (if you can wait that long) and enjoy.
Makes about 12 regular or 24 mini muffins.
Serving size is 1 muffin.
If making mini muffins, each will have about 65 calories, 1.5 grams fat, 1.5 grams fiber, and 1.5 grams protein.
If making regular muffins, each will have about 130 calories, 3.5 grams fat, 2 grams fiber, and 4 grams protein.
