Ingredients
2 lbs. fresh broccoli3 cups coarsely chopped cooked chicken or turkey2 Tbsp. all-purpose flour6 oz. evaporated milk, non-fat1 can reduced-fat cream of mushroom of condensed cream of chicken soup1/4 light mayonaise1 cup plain non-fat yogurt1/2 tsp. curry powder1/2 tsp. garlic powder1/2 cup grated cheddar cheese1/2 cup dry, plain bread crumbs
Directions
Preheat oven to 350 degrees. Steam broccoli till crisp tender. Layer broccoli spears and chicken in casserole dish. While broccoli steams, combine flour, evaporated milk, soup, mayonaise, yogurt, curry powder and garlic powder. Pour mixture over chicken and broccoli. Sprinkle top with cheese and then bread crumbs. Bake for 30 minutes or until bubbly. Makes 6 servings.
