ham and vegetable fritata

4 whole eggs (scrambled) 2.5 oz of cottage cheese nonfat small curd1.5 oz of shredded low skim mozarella cheese 0.25 nonfat milk (mix these ingredients together and set aside) 3 scallions (cut into small pieces) 1 large green pepper 1 zuchhini cut up into pieces equaling 1 cup 4 slices honey ham extra lean cut into small pieces Saute these ingredients until tender and add desired seasonings
spray skillet with cooking spray and saute the scallions, green pepper, zucchini and ham with desired seasonings (I used salt, peper, red peper flakes and cajun seasoning to taste) until tender. Drain any excess liquid and put remaining mixture into a 9 x 13 baking dish.
Mix 2.5oz of cottage cheese with 1.5oz of mozzarella cheese (skim low fat) with the 4 eggs and mix until most of cottage cheese pieces are very small or smooth,. Pour this mixture into the baking dish which contains the vegetable ham mixture
Bake in oven at 375 until firm
Total servings are 8 (3 x4) pieces
