Spiced Beer Fondue

Ingredients
12 oz light colored lite beer1 3/4 cups shredded reduced fat swiss cheese1 cup reduced fat shredded sharp cheddar cheese2 Tbsp whole wheat flour1 tsp course grain mustard1/4 tsp salt1/4 tsp cayenne pepper1/4 tsp nutmeg
Directions
Bring beer to a boil in a medium saucepan: simmer over medium heat until it stops foaming, about 5 minutes. Reduce heat to low.

Toss cheeses with flour in a medium bowl. Gradually add cheese mixture to beer, stirring constantly. Add mustard, salt and cayenne pepper. Cook, stirring constantly, until cheeses are melted. Transfer to fondue pot over low heat and sprinkle with nutmeg.

Serve with apple slices, bread cubes, cooked potato pieces, vegetables or crackers/pretzels.
