1 pkg Flour Tortilla (8 Inch)1/2 Cup Cheddar Cheese, shredded1/2 Cup Monterey Jack Cheese, shredded1 Can Mexicorn (11 oz.)1 Can Diced Tomatoes (15.5 oz.)2 Cans Pinto Beans (15.5 oz.)4 Cans Red Kidney Beans (15.5 oz.)2 Cups Brown Rice, uncooked4 Cups Water
1) Add Brown Rice to 4 Cups of water and allow to boil. Reduce heat to medium low and simmer for 35-40 minutes.
2) The last 5 minutes of the rice cooking...combine the beans, corn, and tomatoes in a large skillet on medium. Combine rice and stir thoroughly.
3) Assembly the burrito-add cheese and freeze or serve immediately.
