Ground Turkey and Veggie Fried Brown Rice

Ingredients
1 lb lean ground turkey Browned1 small onion Diced1 small sweet red pepper Diced1 cup zucchini Diced10 mushrooms Sliced2 cups cooked brown rice Chilled1 can bean sprouts Drained3 tbl olive oil2 tbl Lite Soy Sauce
Directions
Make rice as package directs.(1 cup uncooked rice makes 2 cups cooked).
Brown ground turkey. No oil needed.
Take out of pan and add mushrooms, onion, red peppers, zucchini and 1 tbl olive oil and saute. Also can raise heat and stir fry to get browner and more flavor. When done, add browned turkey, rice, bean sprouts and 2 tbl olive oil. Just heat thru. Add soy sauce, toss and serve.
I used some left over grilled asparagus instead of zucchini. Can use whatever veggies you like.
