Baby Greens with Pancetta Dressing

2 cups Fresh Baby Greens2 oz Pancetta, cut into cubes1 tsp garlic olive oil1 tsp Dijon Mustard1 tsp Seasoned Rice Vinegar
Cook pancetta cubes until slightly crispy.
Meanwhile, place baby greens in a wide, shallow bowl.
When pancetta is cooked, remove pancetta cubes straight onto salad greens.
Add the teaspoon of olive oil to the fat in the pan and remove from heat. Carefully whisk in the teaspoon of rice vinegar and the teaspoon of dijon (it will splatter, so stand back).
Pour mixture evenly over greens and toss to coat.
One serving.
