Caribbean Shrimp Summer Salad

1 cup low-fat strawberry yogurt1/4 cup low-fat mayonnaise1/3 cup orange juice1/2 teaspoon ground ginger1/2 teaspoon salt1/8 teaspoon cayenne pepper2 mangoes, peeled and cubed2 cups red grapes1/4 chopped green onion2 cups cooked medium shrimp1 12-ounce package small shell pastaOptional:2 cups cubed cantaloupe1/4 cup toasted coconut
Bring a large pot of water to boil. Meanwhile, in a large bowl combine yogurt, mayonnaise, orange juice, ginger, salt, and pepper and mix well. Stir in mangoes, grapes, green onion, and shrimp (optional: cantaloupe); cover and refrigerate.
Cook pasta according to package directions until al dente. Drain well and stir into salad. Cover and chill for 4-5 hours to blend flavors. (optional: sprinkle with toasted coconut just before serving)
