Tofu Vegetarian Stir-Fry

Ingredients
1 package Firm Tofu (about 4 21/2 by 21/2 blocks) sliced into bite-size pieces3 Tablespoons Olive Oil (divided)1/2 cup sliced onions1/4 cup Ginger root sliced (matchsticks)2 large Carrots sliced2 cups Cauliflower flowerets1 cup Red peppers sliced3 bunches broccoli crowns2 Tablespoon Vegetarian stir-fry sauce
Directions
1. Heat 1 tablespoon oil in large skillet or wok. Stir-fry onions and tofu 7 minutes over low medium heat. Transfer to warm bowl and set aside.

2. Add remaining olive oil and ginger and stir fry 3 minutes. Add remaining vegetables in the following order:: carrots, cauliflower, red peppers and brocolli, stir-fry for 2 minutes in between vegetables. Cook until red peppers are tender.

3. Return tofu in skillet then add vegetarian stir-fry sauce and stir fry for about another 2 minutes.

4. Remove from heat and serve over brown rice

Makes 6 1-11/2 cup servings
