Couscous Salad with Cucumbers & Tomatoes

Ingredients
* Chickpeas (garbanzo beans), 1 can drained * Whole Wheat Couscous, 2 cup, cooked * *Tomato - Fresh Large Whole, chopped * Cucumber (peeled), 1 medium seeded & chopped * Cilantro, raw, 1/3 cup chopped * *Fresh Mint, 2 tbsp slivered * Olive Oil, Extra Virgin, 3 tbs * Lemon juice, 3 tbsp * *Cumin seed, 1.5 tsp * Garlic, 3 clove, minced Salt & pepper, to taste
Directions
Cook couscous according to directions and cool completely. Set aside, and prepare vegetables.

In a small bowl, whisk together oil, juice, garlic and spices. Add to the couscous and toss together with vegetables.

Before serving, taste and adjust seasoning, if necessary.
