Double-Baked Banana Bread

Ingredients
6 over-ripe bananas, cut into chunks1 tbsp melted butter1 tsp vanilla8 oz cream cheese, softened1/4 cup softened butter 3/4 cup sugar1 egg1 1/4 cups flour1 cup oat flour1/4 cup ground flax1/2 tsp salt1/2 tbsp cinnamon2 tsp baking powder1/2 tsp baking soda1/2 cup strawberry-banana granola1/4 cup diced dates1/4 cup raisins
Directions


Preheat oven to 400F, lightly grease a small baking dish.
Place bananas into the dish and drizzle with melted butter.
Bake for 20 to 25 minutes, then coarsely mash (leave some chunks). Stir in vanilla and set aside to cool slightly.
Reduce oven to 350F and grease 2 loaf pans.
In a bowl, beat together cream cheese, butter and sugar until well blended.
Add egg, beating well.
Mix together flours, flax, salt, cinnamon, baking powder and baking soda in another bowl, stir half into the creamed mixture.
Add bananas and mix well, then add remaining dry ingredients and stir to combine.
Fold in granola, dates and raisins.
Bake for 45-50 minutes. Cool 15 minutes in the pans, then turn out and cool completely on a wire rack.
