Tantalizing Sweet Potato Salad

Ingredients
2 pounds of sweet potatoes (before baking)1 red bell pepper, thinly sliced and diced1/4 cup Craisins (packed) chop into smaller pieces3 Tablespoons lemon juice (or juice of one lemon)3 Tablespoons fresh Italian flat leaf parsley (chopped)4 Tablespoons extra virgin olive oil3 Tablespoons finely chopped fresh rosemary leaves1/3 cup sliced raw almonds
Directions
makes about 6-7 (3/4 cup) servings......prep time includes a minimum of 40 minutes chill time before serving.

Directions:

Bake unpeeled sweet potatoes (yams) in 400 degree oven for 45 minutes, or until tender,but still firm.

Cool and cube

Place in large mixing bowl and set aside.

Mix olive oil, red pepper, rosemary,parsley, lemon juice and Craisins.

Add to the cold sweet potato cubes.

Mix well.

Chill at least 40 minutes to one hour.

Top with sliced amonds and serve.
