1 can Ro-tel tomatoes (10 oz.)1 cup brown riceWater
Makes 6 1/2 cup servings
Pour tomatoes and their juices into a measuring cup. Add water to make 2 1/2 cups. Bring to a boil in a saucepan. Add brown rice and stir. bring back to a boil, reduce heat to simmer and cover. Check after 20 minutes, and add more water if necessary. Cook at least 30 up to 40 minutes, until rice is tender.
If you like, you can saute some onion and garlic in a small amount of olive oil before adding the tomatoes and water to the saucepan. This addition is not included in the nutrition info.
