Crisp Zucchini Ribbons

Ingredients
3 Small zucchini, thinly ribboned using a vegetable peeler1.5 tbsp Olive oil1 tbsp White Wine Vinegar.25 tsp of ground Coriander.50 tsp Red peper flakes2 tbsp chopped basilsalt to taste
Directions
Thinly ribbon Zucchini using a vegetable peeler.

To Prepare vinaigrette: Whisk olive oil, vinegar, basil, coriander, and pepper flakes until thoroughly mized. Add salt to taste.

Steam Zucchini over about an inch or 2 boiling water in a steamer basket. Steam until just starting to wilt.

Put in a bowl and gently toss with vinaigrette.
