Chicken Chili Verde

Ingredients
1/4 medium onion, chopped1 green chili, chopped2 jalapenos peppers, chopped1/2 yellow bell pepper, chopped7-9 medium tomatillos8oz boneless, skinless chicken, diced1/2 cup corn kernals1/2 cup black beans (canned or cooked)1/4 cup reduced fat sour cream2oz Colby-Jack cheese, 2%1/2 cup cherry tomatoes, dicedSpices to tasteCuminCayenneCilantro
Directions
Cook chicken in a saucepan until outsides are white
Add chili, jalapenos, pepper, and onions and saute until just soft
Add diced tomatillos, corn, and beans
Cover pan and cook for about 5 minutes until all ingredients soften

Add in sour cream and spices, cook another 5 minutes for a salsa-like consistency

Turn off heat
Mix in cheese and allow to melt
Toss in tomatoes and serve
