TUNA SALAD

Ingredients
1 can (19 oz) cannellini beans (white kidney beans)1 can (7.5 oz) water--packed tuna, drained2 cups diced tomatoes1/2 cup minced red onions2 tbsp chopped fresh basil or mint leaves1 tbsp olive oil2 tsp each red wine vinegar and lemon juice1 tsp sugar1 clove garlic, minced1/2 tsp dijon mustard1/4 tsp each salt and black pepper
Directions
In a large bowl combine beans, tuna, tomatoes, red onions, and basil. Stir gently to avoid smaching the beans.
In a small bowl, whisk together olive oil, vinegar, lemon juice, sugar, garlic, mustard, salt and pepper. Pour dressing over salad and mix well. May be served immediately or chilled before serving.
