Chicken Enchilladas

2 chicken breast cooked and chopped1 cup chopped onions1/4 cup butter1/4 cup whole wheat flour2 1/2 cups hot water1 Tbsp chicken bouillon1 cup sour cream1 1/2 cups mexican cheese1 red pepper1 yellow pepper1 green pepper1 tsp gound cumin5 flour tortillas
Preheat oven to 350 degrees. In meduim saucespan, cook and stir onions and peppers butter until tender. Stir in flour, then water and bouillon; cook and stir until thickened and bouillon is dissolved. remove from heat; add sour cream.
In large bowl combine 2 cups of sauce, chicken 1 cup cheese, and cumin. Place equal poritons of chinken mixture on tortillas; roll up. Arrange, seam side down, in greaded 13*9 inch baking pan. Top with remaining sauce and 1/2 cup cheese. Bake 25 minutes.
Makes 6 servings.
