Ingredients
I used Kanesu Maiko Udon noodles from the Asian market.
Directions
Boil the noodles, drain and reserve. Add 1 quart of water to a wok and bring to a boil. Dissolve the Miso paste and powdered chicken stock in the water. Add garlic

Add broccoli peppers and mushrooms. Boil until about half cooked. Add rest of the vegetables and allow to boil. Add soy sauce, noodles and tofu. Stir gently after adding the tofu.
