Pumpkin Gnocchi

Ingredients
1 3/4 cups or 1 small can of pure pumpkin, no salt or sugar added1 large egg4 tbsp grated romano or parmigiano2 cups whole wheat flour1/4 tsp nutmegsea salt to tasteblack pepper to taste
Directions
Combine all ingredients in a bowl. Gently roll into a "rope" about 1/2" thick and cut into lengths approx 1/2" long.
Drop into boiling water and let cook until they rise to the top. About 3-4 minutes.
Remove with a slotted spoon.
Serve with a Sausage Ragu sauce or sprinkle with olive oil and some parmigiano cheese.
