Vegan Meatloaf (Adapted from A & L's cookbook)

Ingredients
1 Tube of Gimme Lean Sausage1/2 onion1 bell pepper (any color is fine)1 sleeve saltine crackers1 tsp vegan worcestershire2 tsp dried parsleya few dashes of black pepper1/4 tsp salt
Directions
Preheat oven to 350 degrees.

Put saltines in food processor. Put in bowl and set aside. Put the bell pepper and onion in food processor.

In another bowl, smoosh the Gimme Lean and then add the onion and bell pepper mix. Add the spices and mix well. Then add the saltines and mix until thoroughly mixed.

In a sprayed loaf pan, add the meat loaf mix. Mash down until the loaf is even. Cook for 35-45 minutes or until it is hot in the center.

Goes great with mashed potatoes, gravy and a green.
