Banana Pineapple Muffins

Ingredients
1 1/2 cups all purpose flour1 1/2 cups whole wheat flour1 cup sugar1 teaspoon salt1 teaspoon baking soda2 teaspoons ground cinnamon3 large eggs2/3 cup vegetable oil2/3 cup unsweetened (natural ) applesauce2 teaspoons vanilla extract1 1/2 cup finely chopped pineapple (or canned crushed pineapple, drained)2 cups mashed ripe bananas
Directions
makes 36 regular size muffins

1. Preheat oven to 350 F. Spray pans (or muffin liners) with non-stick cooking spray.

2. Combine all dry ingredients in a large bowl.

3. Mix eggs, oil, applesauce & vanilla thoroughly. Mix in mashed banana and pineapple.

4. Mix wet & dry ingredients together.

5. Fill each muffin cup 2/3 full with batter.

6. Bake for 18 - 22 minutes depending on your oven.
