Mushroom and Black Bean Burger

Ingredients
1 tsp olive oil1 onion finely chopped8 oz mushrooms finely chopped2 garlic cloves1/2 tsp ground cumin1 1/2 C cooked black beans(or one 15 ounce can drained)1/4 cup packed fresh cilantro leaves1 oz soft goat cheese crumbled(optional)4 slices stale bread processed into bread crumbssalt and pepper to taste.
Directions
Heat oil in a large skillet over med-high heat. Add onion and cook stirring until golden about 4 minutes. Add the mushrooms, garlic and cumin and cook, stirring until the mushrooms have released their juices, about 5 minutes. Spoon the mixture intoa food processor. Add the beans and cilantro and process briefly until well combined but still chunky. Spoon into a bowl and stir in the cheese if using and bread crumbs. Season with salt and pepper. With wet hands form into 6 burgers. Mist both sides with non stick spray. Grill the burgers until crisp and heated, about 5 minutes per side.

The recipe called for crumbled goat cheese which I didn't have so I substituted Kraft fat free cheese.

It's a little bland so they suggest putting salsa on it.
