Sara's Next-to-No-Fat Blueberry Muffins

Ingredients
1/2 cup unsweetened applesauce2 cups all-purpose flour3/4 - 1 cup sugar ( I use 3/4 cup sugar but some people like their muffins sweeter)3 eggs - 1 whole and 2 egg whites1/2 Fat Free Soymilk2 tsp Baking Powder1/2 tsp Salt1 tbsp Vanilla1 1/2 Cups Blueberries
Directions
1. Preheat oven to 350 degrees F. Grease muffin tin (Or to save those few extra calories try using paper liners!)

2. Sift flour, baking powder,and salt together in a small bowel and set aside.

3. Cream applesauce and sugar together. Add the egg and egg whites and beat well. Add soymilk and flour mixture. Beat until combined. Fold in blueberries.

4. Fill muffin cups 2/3 full. Bake at 350 degrees F for 25 to 30 minutes. When fully cooked you should be able to insert a toothpick in the center and it should come out clean.
