Whole Wheat Pancake and Waffle Mix

Ingredients
1 cup Whole Wheat flour1 egg3/4 cup milk (enough to make into a batter)1 tbsp sugar3 tsp baking powder1/2 salt6 tbsp flaxseed meal
Directions
makes 8- 4 inch pancakes

mix all ingredients. Spoon about 1/4 cup of batter onto preheated griddle sprayed with cooking spray. Flip and cook on second side when batter is bubbly around the edge and underside is browned. about 1 1/2 mins per side. (watch the heat, they can burn quickly)

    I really liked these. I made em into huge waffles (200cal each) and they were crisp on the outside and nice and dense and wheaty on the inside. Add 1/4 cup of sugar free syrup (more than enough) to one waffle and it's still an amazingly low calorie and filling breakfast. They freeze great too!! - 3/7/11

    Went over very well with my kids. I added some vanilla, pumpkin pie spice and fresh pumpkin puree and only used 3 tablespoons of flax b/c I wasn't sure if you really meant 6 tbsp. - 2/6/11
