Greek Quinoa Salad

Ingredients
quinoa, 1 cupwater, 2 cupgreen pepper, 1/2 cup choppedred pepper, 1/2 cup choppedparsley, dried, 1 Tbspsalt, 1/2 tspjuice of one lemonolive oil, 2 Tbspground cumin, 1/4 tspcucumber, 1/2 choppedcherry tomatoes, 1/2 cup
Directions
Rinse quinoa. Combine with water in saucepan. Bring to a boil and simmer 10 to 15 minutes until done, translucent. Cool.

Combine vegetables in large bowl, add quinoa. Stir in cumin, salt, olive oil.
