Vegan Vegetable Sweety

Ingredients
1 large zucchini, sliced5 roma tomatoes, sliced or chopped1/3 of a sweet onion3 garlic cloves, minced1 tbsp olive oil
Directions
Slice and prepare all vegetables.
When finished, heat oil in a pan on medium heat, and when hot, toss in the onion, and then garlic a little bit later (when the onion begins to turn translucent).
Saute', then add in the rest of the vegetables and cover for 15 minutes, stirring every 5 minutes to prevent sticking. When the zucchini is translucent and the tomatoes have been peeled of their skins by the heat, take off the stove and enjoy!

    I really liked this. It was simple and easy. I also subbed in summer squash b/c that was what I had. That turned out fine. My husband thought it was bland, but I enjoyed tasting the flavors of the vegetables together. Next time I might try adding some herbs to make my husband happier. - 7/15/08

    My son sprinkled Parmesan cheese on top. This is a keeper. I have also taken Zucchini and sauted it with onion and added Reduced fat cheese, then sprinkled crushed reduced fat Ritz on top for my other son that doesn't like tomatoes. Yum! - 2/16/09

    my mom has always made something very similar to this. . but she adds Italian seasoning to it.. also green peppers.. or any color peppers.. but.. ( she adds the small cut round pepperoni!) delicious!then at the very end, she tops it off with low fat mozzarella cheese, just til it melts! just a bit! - 2/10/09

    Yum, this is one of my favorites, in the summer I saute yellow or green squash or both with onion, garlic and red or green peppers with salt, pepper and oregano. In the winter I saute peppers, onion, squash and oregano and add spagetti sauce and pour it over pasta! Very hearty and no need for meat - 2/18/11

    This is very similar to a southwest vegetable dish I make. I use both summer/winter squash, onion, corn and jalepeno with small shredded cheese added after waiters, and cumin...yummy and good way to use squash in the summer when plentiful in the garden or local farmers market. - 2/18/11
