Ingredients
1 medium eggplant, cubes, skin on or off(about 1 1/2 pounds)2 small zucchini (about 1/2 pound)8 cups fresh spinach1 medium onion, finelly chopped (about 1/2 cup)4 medium tomatoes, each cut into fourths1 pound ground turkey, browned1/4 cup olive oil5 cloves garlic, chopped5 grams fresh Oregeno1 to 2 teaspoons salt1/4 teaspoon pepper
Directions
Cook and stir all ingredients until heated through. Cover and cook over medium heat, stirring occasionally, until vegetables are crisp-tender, about 10 minutes.

6 to 8 servings.
