Cilantro Lime Fresh Cut Sweet Potatoes

24 oz (1 bag) Mann's Sweet Potato Spears (or cubed sweet potato)2 tbsp Extra-virgin olive oil1/2 tsp salt2 ea Garlic cloves, minced1/4 tsp Red pepper flakes (optional)1/2 tsp finely grated fresh lime zest1 tbsp fresh lime juice1/4 cup Chopped fresh cilantro
Put oven rack in lower third of oven and preheat oven to 375 degrees fahrenheit. Toss sweet potatoes with 1 tbsp oil, minced garlic and 1/4 tsp salt in a shallow baking pan. Arrange potatoes in 1 layer and roast, stirring halfway through roasting, until tender, about 25 minutes total. Stir together red pepper flakes, zest, and remaining 1/4 tsp salt in a small bowl. Whisk together lime juice and remaining tbsp of oil in a medium bowl, then add potatoes. Sprinkle with red pepper mixture and cilantro, stirring gently to combine, then serve. Serves 8.
