Cheeseburger Soup

Ingredients
1 Cup fat free sour cream1 Cup shredded carrots1 Cup chopped onion0.5 Cup chopped celery2 Cups chicken broth1 Pound ground turkey2 Cups white rice1 Pound Velveeta cheese
Directions
Shred and chop vegetables. Add them to a large pot with chicken broth and bring to a boil. Boil for 15 minutes. Meanwhile cook rice and brown ground turkey. After the vegetables have boiled for 15 minutes add remaining ingredients except for sour cream. Once the Velveeta is melted whisk in sour cream right before serving and heat through.
