Sweet & Sour Lentils

Ingredients
1/4 cup soy sauce1 large bay leaf, whole1/2 cup vegetable oil3/4 cup honey1/2 cup cider vinegar1/2 tsp powdered ginger4 cups water3 cups lentils (green lentils work best)chopped parsley for garnish
Directions
Mix together all ingredients except lentils and water in a 4 quart pot. Add lentils and water. Bring to a boil then simmer until lentils are just ender, about 1 1/2 hrs. Remove bay leaf and stir.

Can be served hot, room temperature or cold. Freezes well.
