1/2 tbsp olive oil1 C. red onion, finely chopped1 C. Mango, peeled and cubed1/2 C. tomato, chopped1-1/2 tbsp ginger, minced1/4 C. lime juice2 tbsp orange juice2 tbsp dry sherry1-1/2 tbsp brown sugar1-1/2 tbsp white vinegar
Directions
Stir together all ingredients in a nonreactive bowl. SStore until ready to serve.
