Yummy Egg Sandwich

Slim Bun (or English muffin)2-3 slices of fresh red bell pepper1 slice of fresh white onion2 Large eggs (I used both yolks)Handful of fresh spinach
Crack two large eggs into a 4inch diameter bowl. I used a glass bowl from Pyrex brand. Don't break the yolks. Microwave in 1 minute segments until cooked through. (you can fry it, but this doesn't even need any added oil/grease/butter/etc.)
Get your slim bun/English muffin. Add a couple slices of fresh red pepper and onions to the bun. THen when the eggs are done, put them on the bun along with the spinach and close it. Microwave for another 20-30 seconds to warm the ingredients.
