Ingredients
2 cans whole-kernel corn, drained1 can finely-diced tomatoes, drained2 cans black-eyed peas, drained and rinsed1 10-ounce bottle light Italian dressing2 cans diced tomatoes with green chilis1 large red onion, finely diced1 each red, green, and yellow bell pepper, finely diced2 tsp. salt3 tbsp. cilantroTabasco to taste
Directions
Combine all ingredients, let set a minimum of 4 hours. (Overnight refrigeration is best). Serve with chips or as a salad dish. Will keep in fridge for at least one week.
