4 Day Diet Cabbage Soup

Ingredients
1 tbsp olive oil1 head cabbage (shredded)3 potatoes (cubed)3 Carrots ( sliced)8 cups Chicken broth1 cup onion(Ham Hock optional)
Directions
Use large soup pot
Saute onion in olive oil until soft (10 minutes)
Added 1 head of cabbage shredded to onion and cook 15 minutes.
Add cubed potatoes, carrots, and chicken broth.
Use spices as desired (salt, pepper)
Simmer 50 minutes.
Makes 12 1 cup servings.

If ham hock added, let cool 8 hours then skim off fat before serving.
