Quinoa Tabbouleh

2 cups water1 cup quinoa1 pinch saltquarter cup olive oilhalf tsp sea saltquarter cup lemon juice3 tomatoes diced1 cucumber diced1 bunch green onions diced (scallions)2 carrots grated1 cup fresh parsley chopped
In a saucepan bring water to boil. Add Quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes, until water is absorbed. Cool to room temperature, fluff with fork.
In a large bowl combine tomatoes, cucumber, green onions (scallions), carrots and parsley. In a small bowl combine olive oil, sea salt, and lemon juice and beat with fork to emulsify. Stir in dressing to the vegetables, and athen add and toss with cooled quinoa.

Thanks for this recipe. I have been looking for ways to use Quinoa ever since I came back from Peru where it is a staple in the diet. But I was really clueless since I wasn't cooking there. - 7/9/10
