Pumpkin Waffles

Ingredients
2 cups whole grain flour (I use soft wheat)2 Tbl. brown sugar, packed1 Tbl. baking powder1 1/4 tsp. pumpkin pie spice1 tsp. salt1/2 cup canned, plain pumpkin (or fresh cooked, but you must drain first)1 large egg2 Tbl. canola oil1 cup nonfat milk
Directions
Combine ingredients. Stir thoroughly, but not too much or batter will be tough. Spray waffle iron with nonstick spray and heat iron. Pour 1/4 cup batter onto hot iron; cook until done, usually about 2 minutes. You can add chopped walnuts or pecans (1/2) cup to the batter, but make sure you account for the extra calories! Serve with pure maple syrup. These can be made ahead and frozen. Just pop in the toaster for a quick breakfast! Makes approx. 6 6-inch waffles.

    These did smell good, but they VERY dry & because of the amount of syrup you had to literally POUR on them, they lost all credit for us on being actually healthy. Nice try, though...and they did smell wonderful! - 1/31/08
