3 lbs red or yellow baby potatoes, 1/4 c olive oil, 1/4 c fresh lemon juice, 1-2 T white wine vinegar, 1T dried or 1/4 c fresh dill, 1/4 c fresh parsley, 1 t oregano, sea salt and pepper to taste
boil potatoes until fork tender, meanwhile wisk together dressing ingredients, add onions and herbs, add cooked quartered potatoes while still warm and refrigerate to combine flavors. I usually add kalamata olives to this recipe too but didn't have any in the pantry and it was still delicious.
