Applesauce Pumpkin Muffins (The Eat-Clean DIet)

Ingredients
old-fashioned oatmeal, not instantunsweetened applesaucecanned pumpkin2 large egg whites + 1 yolkcanola oildouble-acting baking powderbaking sodacinnamonground nutmegpumpkin pie spicemilk, milk alternative or apple juiceflourwhole-wheat flourmaple sugar flakesdried cranberries
Directions
1) Preheat oven to 375F/190C. Line muffin pan with paper liners or coat with cooking spray.

2) Combine oatmeal, pumpkin, applesauce, juice or milk, eggs, and oil. Mix until all ingredients are blended.

3) Measure & mix all dry ingredients. Make a well in the center & pour wet ingredients into dry. Add dried fruit if using. Mix until dry ingredients are just moistened. Fill muffin cups 2/3 full. Bake 15-20 minutes or until lightly browned on top.
