Thanksgiving Salad

Ingredients

3/4 C red quinoa (measured dry), cooked1/2 lb turkey breast, roasted and diced1/2 C dried cranberries1 lb fresh green beans, rinsed, chopped in small pieces and lightly steamed 8 green onions, slicedSprinkle of chopped or sliced raw almonds (optional)Dressing:1/2 C fresh squeezed lemon juice1/4 C olive oil1/4 C balsalmic vinegar4 T honey
Directions assume you have the turkey roasted/diced already (or buy low salt from the deli counter and have them slice it thick for cubing).
Cook the quinoa, steam the beans and let both cool. Mix all the ingredients together (except dressing).
In a glass jar with a lid, mix dressing ingredients and shake well.
If you don't want to serve all at once, store salad and dressing separately and combine / toss as needed.
Serve over pieces of lettuce or spinach.
