2 pieces sprouted wheat bread (Ezekiel Bread or Alvarado St. bread from the health food store...because it's nutritious, flavorful, and provides a chewy base)1/2 cup 1% cottage cheese2 tablespoons (or more)cinnamon "sugar"** Mixture of approx. 3 tsp. Splenda and 1 tsp. ground cinnamon.
Toast bread. Spread each piece of toast with 1/4 cup cottage cheese. Sprinkle generously with cinnamon "sugar" (If you have a quantity of cinnamon "sugar" pre-mixed and on hand, use more as desired.) Enjoy.
Makes one serving.
Also good with sliced strawberries on top!
