Coleslaw from Prong Creek

Ingredients
2 cups shredded cabbage1/2 cup shredded carrots1 Tablespoon finely grated onionDressing:6 Tbsp olive oil mayonnaise (Kraft or Hellmann's)2 teaspoons (10 mL) lemon juice1/2 to 1 teaspoon Splenda (the one that measures like sugar)1 teaspoon saltdash pepper
Directions
Shred the cabbage, carrots, and onion. Add the dressing ingredients to the bowl: lemon juice, sweetner, salt and pepper, and mix well. Best used right away.

This Southern mayonnaise-based slaw is heavy on the carrots - flex them as you like. There's more lemon than sweetner because my family likes it a bit tart but you can adjust the tartness and the amount of mayo. The olive oil mayo tastes just fine!
