2 8" Tortillas2 cups lowfat Colby/Jack, shredded1/4 cup 2% milk1 10 oz. can enchilada sauce3 green onions1 zucchini
Makes 4 generous servings
Heat oven to 400
In a small bowl, combine the enchilada sauce and milk. Spoon 1/4 cup of the sauce mixture into the bottom of a shallow 2 quart casserole, or an 8" cake pan.
Top with 1 tortilla, and half the cheese, onion and zucchini. Top with another tortilla and the rest of the cheese, onion and zucchini. Pour the remaining sauce over the top.
Cover loosely with foil and bake for 20 minutes. Remove foil and bake for 10 minutes more.
