For Vinaigrette:2 Tbsp red wine vinegar1 Tbsp canola (or other) oil1 Tbsp honey mustard 1 tspn minced garlicFor salad:1 Tbsp walnut (or other) oil6 oz chicken tenders, halved lengthwise and cut crosswise into strips (or precooked chicken)1 tspn lemon pepper1 peach cut into thin wedges1/2 cup fresh blueberries1 ounceof blue cheese (could also use feta cheese)1/4 cup of sliced almonds (may toast if desired)Whisk together the vinaigrette ingredients in a small bowl. Heat the oil in a large skillet over medium-high heat. Add the checken and sprinkle with lemon pepper. Cook, stirring occasionally , for 5 minutes or until lightly browned and thoroughly cooked. May use a small amount of vinaigrette in pan with chicken. Warm the vinagrette.Meanwhile, spread the greens on two plates. Add sliced peaches, blueberries. Top with warm chicken. Drizzle with vinagrette and then top with blue cheese and sliced almonds.
