14 Spring Roll Wrappers1/2 Pkg (4oz dry) Rice Stick Noodles1 Fresh Mango DicedApproximately 10 Large StrawberriesJuice of 1 Lemon2Tbsp Agave Nectar1 Small Bunch Fresh Mint (chopped)
Cook rice stick noodles and set aside to drain/cool.
Mix agave nectar, lemon juice, and chopped mint in bowl. After noodles are cool, mix those in also.
Moisten each spring roll wrapper individually in warm water for 20 seconds. Then place on damp kitchen towel to fill. Fill with a pinch of noodle mixture (1/14 of mixture) and top with 3-4 strawberry slices and fresh diced mango.
Wrap like a burrito and place on parchment paper with seam down.
Be sure to store in an airtight container with parchment paper underneath. To ensure they remain damp, I suggest keeping a damp papertowel in with them.
