Grilled Arugula Pizza with Ricotta and Smoked Mozzarella

Ingredients
1/2 a dough of Shaws Pizza Dough (or any other pre made ball of dough that would serve 10-12 people.1 cup of baby arugula1/2 cup of part skim ricotta cheese4 ounces smoked mozzarella2 roma tomatoes, sliced
Directions
Roll out dough thinly, put a little Evoo on it, and then place on grill for a couple minutes
In processor, take arugula, ricotta, smoked mozz and blend til smooth.
on grilled side of dough, place cheese mix.
place tomatoes on top of that.
grill for an additional 3-5 minutes til melted.
Makes 8 slices of pizza.
