Moosewood Tabouli

Ingredients
1 1/2 cups bulgar wheat (dry)1 1/2 cups water1 1/2 tsp salt1/3 cup fresh lemon juice1 1/2 tsp crushed fresh garlic3/4 cup scallions3/4 tsp. dried mint1/3 cup olive oil1 cup cherry tomatos1 1/2 cups parsley15.5 oz garbanzo beans
Directions
combine boiling water, salt, bulgar in bowl. Cover and let stand for 15-20 minutes.
2. Add lemon juice, garlic, oil and mint, and mix thouroughly
3. chill 2-3 hrs.
3. add vegetables just before serving.
