Stuffed green pepper soup

Ingredients
1/2 pounds extra lean ground beef2 cups of chopped green bell peppers1 cup chopped onions (optional)1 can (14-15 oz) diced or chopped tomatoes1 can (14-15 oz) tomato sauce (can use condensed tomato soup)15 oz low sodium beef broth (or 1 can of water and 2 beef bouillon cubes)1 1/2 -2 cups cooked rice (calculations are for white rice)splash or 2 of Worcestershire sauce (optional)salt and pepper to taste
Directions
Brown ground beef then add green pepper and onion. Cook until soft, about 8 minutes. Add everything else except rice and bring to a boil. Lower heat and simmer for 35 minutes. Add rice and let simmer for 10 minutes more. Add salt and pepper to taste.

You can also add thyme and oregano, if you want. When serving, I sometimes sprinkle grated mozzarella cheese on top.

Calorie calculations include 2 splashes or Worcestershire sauce, bouillon cubes instead of broth, and 1 1/2 cups of white rice. Great with ground turkey or veggie crumbles also.

You can get more than 6 servings out of this, but I eat this as a complete meal with a hard roll, so I get about 6 servings out of this. I think it probably makes 8 servings (around 1.5 cups each).
