Macaroni Salad

1 Cup elbow macaroni1/4 Cup radishes, sliced1/4 Cup green onion, chopped3/4 Cup low fat cheddar cheese, diced1/2 Cup extra lean ham, diced (optional)3 Hard boiled eggs, chopped1/2 Cup light mayo 1/2 Cup sweet green relish2 tsp yellow mustard3 Small dill pickles, chopped (optional)Black pepper to tasteSprinkle of paprika
Makes 6 1/2-cup servings
1. Cook macaroni to package directions (al dente: approximately 8 minutes). Drain and rinse with cold water. Set aside.
2. In a medium bowl combine radish, onion, cheese, ham and macaroni.
3. In a seperate bowl combine mayo, relish, mustard, dill pickles, and a pepper to taste. Add to macaroni mixture and stir until all ingredients are coated and sauce is distributed evenly.
4. Gently stir in chopped egg, just enough to coat with dressing. Sprinkle top of salad with paprika (do not stir in).
5. Chill overnight or a minimum of 4 hours before serving.
