Low cal whole wheat applesauce pancakes

Ingredients
1 cup whole wheat flour1 tablespoon common granulated sugar2 teaspoons baking powder1/4 teaspoon salt1 egg1 cup fat free milk2 tbsp applesauce
Directions
Mix the flour, sugar, baking powder and salt in one bowl. In another bowl, scramble the egg, then add the milk and the 2 tablespoons of applesauce. Mix the dry and wet ingredients together, well enough to eliminate dry spots but no more.

Heat the frying pan to medium temperature. Pour a pancake. The pancake will bubble. When the bubbling settles down and the edges are slightly dry, flip the pancake. When the pancake looks done, remove it and start another one.

Makes about eight pancakes if you use 1/4 cup of batter for each one.

    I made this with whole wheat pastry flour and added vanilla and cinnamon. It was pretty good. I will make it again. - 10/16/10
