Whole Wheat Pasta Vegetable Salad

Ingredients
1 lb whole wheat spaghetti broken into 2 inch lengths100 grams salami-finely chopped6 oz chopped marinated artichoke hearts and liquid2 to 3 zucchini diced2 cups diced carrots1 very thinly sliced onion2 cups grated low fat mozzarella1/4 cup parmesan1/4 cup olive oil1/3 cup white wine vinegarfresh basil, rosemary, parsley, oregano to taste (can use dried if necessary)
Directions
Cook whole wheat spaghetti til tender. Toss in diced carrots just before removing from heat. Drain, then add onion while still hot. Add chopped marinated artichokes and liquid. Add zucchini and toss. Mix vinegar, olive oil, parmesan and finely chopped herbs. Pour onto salad and mix. Add mozzarella and finely chopped salami and mix again.
